From November 11 to 22, Virgin Hotels Las Vegas will host Sofia, the celebrated Miami Design District hotspot known for pairing high-end Italian cuisine with an atmosphere that blends art, energy, and elegance.
This exclusive pop-up brings the essence of Miami’s modern Italian dining scene straight to the desert, offering a one-of-a-kind culinary event that’s equal parts refined and unforgettable.
About the Event
For eleven nights only, Virgin Hotels Las Vegas will transform into Sofia. The pop-up will feature the same chic design, gallery-worthy art pieces, attentive service, and vibrant edge that made Sofia one of Toronto and Miami’s most talked-about dining destinations.
Corporate Executive Chef Patrick Ochs and Sofia Miami Executive Chef Abel Vuelens will lead the kitchen, presenting a mix of Sofia’s most celebrated dishes alongside limited-edition plates crafted exclusively for the Las Vegas run. Complementing the cuisine is a regionally inspired cocktail program designed by mixologist Nishan Chandra, with inventive Italian ingredients, bold flavor profiles, and sleek presentation.
The experience is elevated further by a curated wine list featuring rare Italian vintages and premium labels. Sofia invites guests to savor the art of dining through flavor, design, and atmosphere that together redefine Modern Italian with a Las Vegas flare.
From the Menu
The Sofia menu celebrates precision and passion through thoughtful courses that balance familiarity with flair. The Crudo section offers raw artistry, from Tonno with basil, bergamot aioli, and gooseberry, to Aragosta featuring Maine lobster with orange, saffron aioli, and fennel soffritto. For something truly indulgent, the Caviale service includes Imperial Ossetra Caviar with blini, mascarpone, chives, and egg.

Under Antipasto, options like Polpo with octopus, romesco, and nduja dressing and the decadent Pizza al Tartufo topped with black truffle and potato crema showcase modern Italian technique. Pasta courses, always a Sofia signature, include Spicy Rigatoni alla Vodka with Calabrian chili and 36-month parmigiano reggiano, Cacio e Pepe al Tartufo with truffle pecorino, and Spaghetti Nero di Seppia served with Maine lobster and shellfish brodo.
Entrées are as elegant as they are substantial. The Costelette di Agnello highlights Australian lamb chops with bomba calabrese and mint, while the Bistecca Prima features an 8-ounce prime New York strip layered with crispy potato, taleggio fonduta, and black truffle. Each dish feels composed yet approachable, crafted to engage every sense.
For those seeking the full journey, Sofia’s four-course tasting menu ($95 per person, $55 for the wine pairing) delivers a curated progression through the restaurant’s most distinguished offerings.
